This is my favorite pumpkin bread recipe. It’s so simple and delicious. I like that it doesn’t have an overwhelming spiced flavor and it is not too sweet. I love to have a slice in the morning with coffee or in the afternoon with tea. My son also loves this treat and asks for it all the time.
1 1/2 cups all-purpose flour
1 1/4 tsp baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 cup packed canned pumpkin
1 cup packed brown sugar
1/2 cup buttermilk (I substitute 1/2 tablespoon white vinegar in 1/2 cup whole milk)
2 tbsp softened butter
First, sift the dry ingredients together in a large bowl. Mix in the pumpkin, brown sugar, buttermilk, egg, and butter until well-blended. Pour into a greased and floured 9×5 inch loaf pan and smooth the top.
Bake at 350 degrees and start checking to see if it is done (toothpick comes out clean) after 45 minutes. In my oven it takes almost an hour.
