One of my favorite meals to make on a hot summer evening is simple grilled steak and a big salad dressed in vinaigrette. So good and so easy.
On this particular evening we used lots of chopped romaine and fresh baby spinach, a generous amount of grape and cherry tomatoes cut in half, red onion, and plenty of crumbled Gorgonzola.
I have fallen in love with this tasty Red Wine Vinaigrette dressing from Giada De Laurentiis’s cookbook Everyday Italian.
1/2 cup red wine vinegar
3 tablespoons fresh lemon juice
2 teaspoons honey
2 teaspoons salt
1 cup olive oil
Mix everything in a blender and add extra salt and pepper to taste.
This recipe makes at least enough dressing for 2-3 large salads depending on how much dressing you like. If you make up a batch of the dressing and grill enough steaks for two meals, you can have this dinner two nights in a row with very little effort. Just throw together a fresh salad on night two and top with the cold leftover steak. I like a large glass of cold, dry white wine with mine. Delicious!
